Here's Ruth's recipe for amazing dairy-free chocolate cake.
Mix 4 oz sugar and 4 oz dairy-free marg
Add 2 lightly beaten eggs bit by bit
Fold in 3 oz sifted flour, 1oz cocoa and 1 teaspoon baking powder
Spread into two victoria sponge tins with the bottoms lined
Cook - at gas mark 3/170C/325F for about 20 - 25 minutes until you can hear them when you put your ear to them.
When cool, sandwich with icing (marg, icing sugar, cocoa, as much as seems like a good idea at the time).
I'm not convinced about sticking my ear in a hot cake! I think that the cake's cooked when it pulls away from the edge of the tin.
